You can edit texts in hex editor. If you open one of the decompressed "en" files and scroll down a little you will see english text https://i.imgur.com/OdH7INx.png

To save it as XST you could try to use reimport mode

I have never done it this way. Some games are working fine with unpacked files or in some cases you can probably use reimport mode from quickbms (read more here http://aluigi.zenhax.com/papers/quickbms.txt) But your method can also work, maybe someone else will know how to help you find version numb...

I would say that you need to find a compiler that will generate the same output as the original and after compiling you should xor your lua file with 0x66 and replace the original file.
But I'm not sure if it is 100% correct way, I've never done any lua compiling.
