The short answer is "it depends on the game". Depending on the type and age of the game in question, its save game files may be fixed-size or variable-size (and even split up between multiple files!), and while stuff like amount of currency isn't likely to change in location in the format ...

What's the story behind this? Did all these tools disappear or something? If so, where did you find copies?

Mr.Mouse, Craptain, perhaps you guys could host a copy of these tools so they don't disappear in the future?

I've got about a dozen game installed on my computer (including, of course, NAB and C1/C2), but the only one I've played recently (other than the occasional online game here and there) is Minecraft.

Yeah, I did some research on this years ago and saved a few pages offline; I've still got them somewhere, but if various fansites are gone with no backups, that's a major setback. =(

As I said above, it's incredibly unlikely that there is going to be much of anything worth changing that's stored in plaintext in the save files, and even if there was, you'd have to figure out how the string length is determined (is it Pascal-style? Just to be clear, you almost never find savegame formats that can be edited with a text editor; it's far easier to store the information in such a way that a hex editor or custom savegame editor is required to edit the files. You're also not going to see anything like "Change this value to give...
