Those are mostly used in servers. They aren't known for having the "best" features or anything. Theres a few hidden gems in there but unless you're doing your work on a web server i don't see much point in using any of these. Padding is stuff that is presumed to be useless. You can either completely skip it or just put it into a dummy variable.

u32 = unsigned int; 4 bytes
u16 = unsigned short; 2 bytes
u8 = byte; 1 byte

There is no "This is exactly how you do it" thing for this. You just create a program that can read, edit, and then write the files.
